Anzac Biscuits

Ingredients

1 cup rolled oats

2/3 cup raw sugar

½ cup Ananda Food hemp protein powder

½ cup plain flour

1/3 cup desiccated coconut

1/3 cup Ananda Food de-hulled hemp seed

200g butter

2 tablespoons golden syrup

2 tablespoons hot water

½ teaspoon bicarb soda

Pinch of salt

Directions

  1. Preheat oven to 180 degrees Celsius
  2. Combine the dry ingredients in a mixing bowl: hemp seeds, hemp protein powder, coconut and flour.
  3. Melt and combine butter with golden syrup and sugar in a saucepan. Combine water with bicarb, then add to butter & golden syrup mixture.
  4. Add wet ingredients to the bowl and stir.
  5. Use a dessert spoon or ice cream scoop to make portions. Hand-roll portions into balls and place on lined baking tray.
  6. Bake for 15 minutes until tops are golden brown.

Notes

At 12 minutes cooking time, cookies will be soft to touch but will harden as they cool.

If you like a crunchy cookie, cook for 15 minutes.

Remove from the oven and allow to cool on the sheet for 5-10 minute.

Store in an air-tight container for up to a week or so (longer in the fridge).
